For Peanut Butter Butter Cream 1 cup creamy peanut butter (don't use old-fashioned or natural) 1/4 cup unsalted butter, room temperature 1 cup powdered sugar 1/8 tsp sea salt 1 1/2 Tbsp milk 1 tsp vanilla extract 1 1/2 cups salted cocktail peanuts
For Ganache 1 1/2 cups semisweet chocolate chips 5 Tbsp unsalted butter, room temperature

Directions:1) Bake brownies in 9x13 pan, lined with foil with 4 inch overhang on opposite sides of the pan. Let cool completely. 2) Mix peanut butter and butter together with a mixer until totally blended. Turn down mixer and slowly add powered sugar and salt. Turn mixer to medium and add milk and vanilla and keep mixing until full blended. Dollop in heaping spoonfuls on top of brownies. Spread evenly with a butter knife. Scatter peanuts evenly over the butter cream pressing into the butter cream so that the ganuche has something to hold onto and the peanuts are covered. 3) Make the ganache by melting the chocolate chips and butter together over low heat, stirring constantly. Allow the ganache to cool down slightly for 10 minutes or so. Then pour over the cream layer. Smooth ganache out with the butter knife making sure to cover the butter cream and peanuts completely. Chill in fridge until toppings are set- 11/2 hours or so. 4) Lift up ends of foil liner to remove from pan and place on a cutting board. Cut into squares. |
