18 crackers or 2 packages plain graham crackers
1/3 cup sugar
1/2 tsp fine sea salt
2 sticks unsalted butter, melted, plush more softened for pan
4 cups milk chocolate chips (or semi-sweet depending on your taste)
4 cups mini marshmallows

Preheat oven to 350º
1) Line bottom and sides of 9x13 pan with foil. leave 4 inches of overhang on two opposite sides- these will be handles to remove the bars from the pan. grease foil as well.
2) In food processor, grind graham crackers into a fine meal (you need 2 cups). In a large bowl combine crumbs, sugar, salt, and melted butter. The mixture should look and feel like wet sand. set aside 1/2 cup of crumb mixture for topping. Evenly press the remaining crumb mixture into bottom of foil lined pan. Bake in oven until golden brown about 12 minutes. Remove from oven and allow to cool.
3) Melt your chocolate in a sauce pan over low heat stirring continuously until fully melted. Preheat the broiler.
4) Pour the melted chocolate over the cooled graham cracker crust. Spread evenly over the crust with a butter knife. Then sprinkle marshmallows over the chocolate, pressing them lightly and then sprinkle remaining crumb mixture over and in between marshmallows so that you can not see the chocolate peaking thru the marshmallows.
5) Broil bars until the marshmallows are golden brown- 30 seconds to 1 minute. Refrigerate until chocolate is hard- 2 hours. Grab ends of foil and lift out of the pan in one piece. Move to a cutting board and cut into 24 squares.
