4 cups (approximately) cooked Calrose Rice
1/4 cup green onions, chopped
4 eggs
1 carton mushrooms, scrubbed and chopped
3/4 pound fresh large shrimp, cut into pieces
2 to 3 tablespoons cooking oil - peanut, canola or vegetable
1 teaspoon sesame oil
2 tablespoons soy sauce (or to taste)
Salt and pepper to taste

Optional: Toasted sesame seeds

Heat oils over medium/high heat in a large frying pan or wok. Quickly scramble eggs. Add raw shrimp and cook until done. Add mushrooms and green onions and cook slightly - one to two minutes. Add rice, soy sauce, salt and pepper and mix and cook until thoroughly blended and heated through. Serve with extra soy sauce and sprinkle with optional sesame seeds.
