3/4 cup saltines (about 20 crackers)
1/2 tsp dried thyme
1/4 tsp pepper
1/4 tsp sage
3T Dijon mustard
4 chicken breasts (also good on pork chops)
1/4 c. olive oil

Directions:
Directions:
1. In a small bowl combine cracker crumbs, thyme, pepper and sage. Spread mjustard on both side of pork; coat with crumb mixture.

2. In large skillet, cook chicken (or pork) in oil over medium-high heat for 4-5 min on each side or until golden brown.
