1 Tablespoon olive oil
2 lbs chuck steak, cubed
1 lb crumbled hot Italian sausage
2 large onions, diced
12 cloves garlic, diced
1 Tablespoon cumin
1 Tablespoon paprika
1 Tablespoon chili powder
1 (28 oz) can crushed tomatoes
1/2 cup water
1 (15 oz) can of pinto beans (rinsed & drained)
1 (15 oz) can of Northern beans (rinsed & drained)
1 (15 oz) can dark kidney beans (rinsed & drained)
Garnishes: chopped scallions, sour cream, shredded cheese
Serve with corn bread

Heat oil in a large Dutch oven over medium-high heat. Brown steak and sausage stirring for 8 minutes. Transfer to a bowl. Reserve 2 tablespoons fat from meat and discard the rest. Saute the onions and garlic in the reserved fat until translucent 8 minutes. Add the cumin, paprika & chili powder, cook for 1 minute. Add tomatoes, water, sausage & beef. Stir and simmer for 90 minutes over low. Add rinsed beans and simmer for 30 more minutes. Garnish and serve.
