2 medium eggplants
4 eggs beaten
1/4 milk
2 cups seasoned bread crumbs
1 jar of good spaghetti sauce
salt and pepper to taste
granulated garlic
granulated onion
small bag whole milk shredded mozzarella
1/2 cup grated cheese
olive oil spray
2 sheet pans
9 x 12 baking pan

Cut 1/4 inch off top and bottom of eggplant. Peel eggplant and slice it between 1/4 and 3/8 inch thick pieces. Beat eggs and milk together in a bowl. Place seasoned breadcrumbs in another wide mouth bowl. Dip eggplant slices into egg/milk mixture and then into breadcrumb mixture.
Place slices side by side on large sheet pans which have been sprayed with olive oil spray. Sprinkle salt/pepper, granulated garlic, granulated onion and grated cheese on slices. Drizzle EVOO over slices.
Place on center rack in a 350 degree oven for 20-25 minutes until lightly browned. Remove from oven.
Lightly cover bottom of 9x 12 baking pan with spaghetti sauce. Begin to layer eggplant, grated cheese, and mozzarella and lightly sauce it. Continue to layer the same way until all eggplant is used.
Cover pan with parchment paper first then aluminum foil. Bake at 350 degrees for 50 minutes.
