3/4 cup sugar
1/2 cup vegetable, canola or melted coconut oil
2 eggs
2 teaspoons vanilla
1/4 teaspoon salt
1-1/2 teaspoons baking powder
2 cups all purpose flour
1/2 cup coarsely chopped macadamia nuts
1/2 cup white chocolate chips

Directions:

Preheat oven to 350º. Line a baking sheet with parchment paper (or spray with cooking spray). In a large bowl, whisk together the sugar and oil, then blend in eggs and vanilla. In a separate bowl, stir together salt, baking powder and flour. Fold into wet mixture, then fold in chopped macadamias and white chocolate chips.

Turn mixture onto a lightly floured board and shape into a 10 inch by 3 inch log, flouring hands if necessary to avoid sticking. Transfer log onto cookie sheet, flatten slightly and bake until just set, 25 to 30 minutes. Remove from oven and let cool 15 minutes. Reduce oven temperature to 325º.

Transfer log to a board, and using a serrated knife, cut into slices about 1/2 inch thick. Place cookies back onto cookie sheet and bake again to dry and brown slightly, about 11 to 18 minutes. Turn once during baking to ensure both sides bake evenly. Remove from oven and cool completely on wire rack. store in airtight container.

I remember staying in a condo on Oahu when all five of you kids were pretty small - I think Hayley was a baby on this particular trip. Call me crazy, but I packed and brought over our tea dishes in one of the suitcases so that we could have tea parties. I found a basic biscotti recipe and adapted it to be more "Hawaiian" and made this biscotti to have with our tea. It's fairly easy to make and very yummy.
