Greek Rice Pudding Recipe

1 c. Arborio rice or any white rice (Basmati works well)
2 c. water
2 c. milk (3.5% fat or close to that)
400 ml heavy cream
1 c. sugar
6 cardamom seeds or seeds from 1 vanilla bean
2 cinnamon sticks
Pinch of salt (optional)
ground cinnamon before serving (optional)

Directions:
Directions:
Place a pot over medium heat.
Add the rice, water, milk, and heavy cream
In a food processor, grind the sugar and cardamom seeds until finely ground (or vanilla seeds)
Add to the pot.
Stir and add the cinnamon sticks
As soon as the mixture comes to a boil, lower heat to medium low and simmer for 20-25 min. until the rice is cooked and the mixture thickens.
Stir every 5 minutes or so, making sure the rice doesn't stick to the bottom of the pot.
When ready, remove from the heat, cover with lid, and let it rest for 5 min.
Divide equally into serving bowls.
Sprinkle with a generous amount of ground cinnamon.
You can serve it warm or cold. If you like it cold, refrigerate to chill.
