1 cup white or brown rice (to taste)
1 teaspoon salt
1/2 cup prepared chutney
3 tablespoons lime juice, fresh-squeezed
2 tablespoons vegetable oil
1 teaspoon fresh ginger root, peeled and minced
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon turmeric
1/8 teaspoon cayenne pepper
1 pound boneless, skinless chicken breasts, cooked and cut into one inch pieces
2 cups fresh pineapple or papaya, peeled and cut into one inch cubes
1/2 cup macadamia nuts, cashews or almonds

Directions:
Directions:
Make rice according to package instructions. Meanwhile, in a large bowl, stir together chutney, lime juice, vegetable oil, ginger root, coriander, cumin, turmeric and cayenne to make a dressing. Add cooked rice and cooked and cubed chicken and toss to coat with dressing. Cool to room temperature and then refrigerate. Stir in pineapple and/or papaya and nuts just before serving.
