7 eggs, room temp.
10 c. whole milk, room temp.
2 c. sugar
1 c. fine semolina flour
1 heaping Tbls butter
Zest of one lemon
1 pkg. phyllo
2 sticks butter (for brushing)
14x11" baking dish

Syrup:
2 c. sugar
1 c. water
juice and zest of 1/2 a lemon

Directions:
Directions:
Mix eggs, sugar, and semolina in a pan and head over medium heat, stirring constantly. Add milk, zest and butter.
Mix with a potato masher until custard is slightly thick, yet not runny. Place towel between pot and lid and cover. Set aside.

Oven - 350º.

Butter dish. 10 phyllo sheets on bottom - brush each sheet with butter. Leave edges over pan edge. Pour custard over phyllo final sheet.
Add 10 sheets phyllo on top, butter between each sheet. Score phyllo into pieces.
Bake for 35-40 min. until top is a nice brown.
Cool.

Make syrup and ladle over dooled custard until absorbed.
Complete slicing.
Refrigerate overnight to set.
