Thin Chicken Cutlets
Large yellow or white onion
Panko seasoned bread crumbs
Ground Flaxseed Meal
Lemon
Lemon Juice
White wine
Olive Oil
Capers

Directions:
Directions:
Dredge meat in panko/flax meal mixture. Brown in pan in olive oil or butter. Layer in Casserole Dish with very thin lemon slices, onion slices and capers. Deglaze pan with white wine and lemon juice. Pour over layered meat and bake in 350 oven for hour or hour & half.

(You can use this recipe with beef too – London Broil strips, you leave out capers and lemon and use mushrooms & scallions, and use red wine vs. white wine)
