2 Tyson Cornish Hens
1/2 cup Kikkoman soy sauce
1/2 gallon cold water
1/2 cup kosher salt
1/2 cup brown sugar
1 orange, juiced
1 lemon, juiced
3 sprigs fresh rosemary
1-2 tablespoons olive oil
to taste kosher salt and ground black pepper

Directions:
Directions:
Combine soy sauce with water, salt and brown sugar in a sauce pan over medium heat and stir well until everything is dissolved. Remove from heat and stir in orange and lemon juices with rosemary. Add the brine mixture to the water. Place the frozen hens in the brine, cover and refrigerate overnight.
Preheat oven to 375º.
Remove hens from the brine, cut each hen down the backbone, and spread flat in a baking dish. Rub skin with olive oil and sprinkle with salt and pepper. Place into the oven for about 45-55 minutes or until internal temp reaches 180º.
