World Famous "Shoto" Grilled Potatoes Recipe

What you need:
Large Cast Iron Fry Pan
Metal pancake turner
Hot pads!!
Charcoal grill (or as last resort gas grill)

6 Large Red Potatoes - Scrub potatoes and leave skins on
1 Large Onion, peeled
1 pound Bacon
Garlic salt to taste
Celery salt to taste
Pepper to taste
Liquid smoke (optional)

Directions:
Directions:
Cut 1 pound bacon into approx 1 inch pieces and layer on bottom of cast iron fry pan.
Cut potatoes in 4 quarters the LONG way then slice potato quarters approx 1/2 inch thick. Layer on top of bacon.
Dice onion and layer on top of potatoes. Add seasonings to taste

Put fry pan on grill and do not stir until bacon starts to fry. Take your metal pancake turner and slide and lift bacon to check bacon. When bacon STARTS to brown, then you can start stirring potatoes from bottom up to top. (If you do not wait for bacon to start to brown, it won't be fully cooked when rest is done.)
Keep stirring from bottom to top. (Make sure to scrape the crusty potatoes, bacon and onions from the bottom while stirring).
When potatoes are golden brown, remove from heat. Be careful, the cast iron pan will be HOT,HOT,HOT!!!
Serve from pan.

These world famous potatoes should be fried outside on a charcoal grill. However, if you do not have a charcoal grill, add a few drops of liquid smoke for extra flavoring. ENJOY!!
