8 oz cream cheese
1/2C sour cream or greek yogurt
1/2C half&half
3 eggs
Truvia
1 tsp vanilla

1/2 or whole recipe Low carb graham cracker crust

Directions:
Directions:
In a medium saucepan mix cheese, yogurt, half&half, and eggs well.

Heat over medium, stirring constantly, until thickened. Remove from heat. Add vanilla and sweetener to taste.

For individual cheesecakes, place 12 liners in a cupcake tin, drop a tablespoon or so of crust mix in each cup, press down, and divide the mix evenly between.

For a single, put crust in a pie plate and pour filling.

Chill in refrigerator for at least an hour. Add topping if desired.
