1 lb bag of Butternut Squash, diced
2 Tablespoons of olive oil
3 Tablespoons of maple syrup
1/2 small onion, diced small
1/2 cup of chopped roasted pecans
1 Tablespoon butter
sea salt as needed

Directions:
Directions:
Preheat oven to 400. Toss squash with olive oil and sea salt. Place on a single layer on a parchment paper lined roasting pan with sides. Bake for 20 minutes. In a skillet, melt butter and add onions over medium heat until onions appear translucent.

Add roasted squash to the mixture and cook approximately five minutes or until squash begins to become soft. Toss with maple syrup and pecans then serve.
