1 1/2 lbs beef tenderloin or sirloin, trimmed of fat and cut in 2" X 1/2" strips
1 tsp salt
1/2 tsp pepper
1 small onion, diced



SAUCE:
1 c (2 cubes) butter
1/2 c flour
4 c strong beef stock (consommé)
1 tbsp dijon or brown mustard
1 c sour cream

Directions:
Directions:
In a large pot, melt 1 cube of butter and cook beef and onion 10 minutes over medium heat. remove meat and put in a bowl. Add 1 cube of butter and melt, then add flour and make a roux, stirring to brown and get the bits of fond up. Add 4 cups beef stock and mustard. simmer for 5 minutes until thick. Add beef to mixture, off heat stir in sour cream. Serve over noodles or rice.
