1 Whole Smoked Chicken de-boned**
2 lb. de-veined/peeled shrimp**
1 gallon water
2 lb. okra-cooked in a little oil and vinegar
1 lb. pork sausage cut in rounds-fried
1 lb. deer/other sausage cut into rounds-fried
4 c. onions chopped
2 tbsp. fresh minced garlic
1 c. green bell pepper chopped
1 c. red bell pepper chopped
1 c. yellow bell pepper chopped
4 tbsp. salt
1 tbsp. ground black pepper
1 tsp. garlic powder
1 tbsp. Slap Ya Mamma Seasoning (Yellow Label)
2 lb. craw-fish tails
1 lb. lump crab meat
4 tbsp. shallots
3 bunches green onion
4 tbsp. parsley
1 tbsp. Gumbo File
3-4 bay leaves
1 tbsp. kitchen bouquet (browning & seasonings)

Bring 1 gallon of water to boil-** with the bones/skin from smoked chicken along with the shells from the shrimp. Boil for about 1 hour or so. Boil the okra in a little oil and vinegar until the slim is gone. Make roue' - mix the 1 cup veg. oil and 1 cup flour. - put in microwave for 5 minutes. Continue in 1 minute intervals until the desired color is obtained. This will be very hot. Cook the sausage separately and drain on paper towel. In the drippings cook: 4 c. onions/2 tbsp. minced garlic/1 c. each green,yellow,red bell pepper - drain after tender. In a very large pot combine the meat - chicken & sausage with the onions/garlic/peppers. Strain the stock in to the pot - add roue' - Add: 4 tbsp. salt, 1 tbsp. black pepper, 1 tsp. garlic powder, 1 tbsp. Slap Ya Mamma Seasoning (yellow label) This should cook about 45 minutes. Then add: craw-fish tails, lump crab meat, shrimp, shallots, green onions , parsley, gumbo file, 3-4 bay leaves, 1 tbsp. kitchen bouquet (browning & seasonings) Simmer 5 minutes - Serve with rice.
In New Orleans they serve gumbo with yellow potato salad. Very time consuming - but very well worth it.
