Baileys Chocolate Chip Cheesecake Recipe

Ingredients: Crust: 2 cups graham cracker crumbs ½ cup chopped walnuts ¼ cup sugar 6 tablespoons melted butter
Filling: 2¼ lbs cream cheese, at room temp 1⅔ cups sugar 5 eggs, at room temp 1 cup Baileys Original Irish Cream 1 tablespoon vanilla 1 cup semi-sweet chocolate chips

Directions:Preheat oven to 325º
Crust: Mix all ingredients. Press into a 10" spring form pan and up the sides one inch. Bake for 7-10 minutes. Remove from oven and cool completely.
Filling: Beat cream cheese with electric mixer until smooth. Beat sugar in gradually, and then add eggs one at a time, mixing well after each addition. Blend in Bailey's and vanilla.
Assembly: Spoon in 1/3 of filling. Sprinkle half of chocolate chips evenly. Spoon another 1/3 of filling carefully over the chocolate chips. Sprinkle the remaining chocolate chips over the filling. Spoon last of the filling over the chocolate chips.
Bake approximately 1 hour and 20 minutes or until puffed, springy in center and golden brown. Place a pan of water on bottom rack of oven while baking to keep it moist. Cool cake completely. Remove from spring-form pan, then cover with plastic wrap and refrigerate for 1-3 days before serving. |
