Tutu’s Greek Spaghetti Recipe

12 oz. spaghetti
1 stick butter or margarine
1 large onion, diced
2 c. shredded sharp cheddar cheese
16 oz can diced tomatoes w/garlic, basil, oregano (or whatever Italian flavored tomatoes you can find in a can J )
1 sm. can chopped mushrooms
1 sm. can chopped black olives
1 can cream of mushroom soup
1/3 cup milk
fresh parsley

Cook pasta per package directions, drain and set aside.
Meantime, melt butter in large frying pan. Saute onions, mushrooms and olives in butter. Sprinkle Italian seasoning over onions, et. Al, while sautéing. If you don’t have Italian seasoning, you can use oregano and or basil.
Add can of tomatoes with juice and simmer a few minutes.
In a deep 13X9 glass dish put ½ of the spaghetti in the bottom. Use two forks to spread the pasta to all sides. Cover with 1 c. of cheese. Then cover cheese with ½ the tomato mixture. Then add last layer of pasta, then last cup of cheese, then end with tomato mixture.
Mix milk with soup and pour over top. Bake at 350 , covered, for 30 minutes. (I use Reynolds non stick foil. If you use reg. foil some of the top layer will come off when you take foil off.) Then take foil off and bake for 15 more minutes but lower the oven to 325.
When done, top with fresh chopped parsley! I like to fix this with garlic toast and a big green salad!
