½ c. (1 stick) unsalted butter
1 c. brown sugar
1 small can sliced pineapple
3 eggs, separated (beat egg whites to soft peaks)
1 c. sugar
5 T pineapple juice
1 c. flour
1 t. baking powder

Directions:
Directions:
Melt the butter and brown sugar in an 8” round cake pan or cast iron skillet.
Arrange pineapple slices on top.
In a medium bowl, combine the egg yolks, sugar, pineapple juice, flour and baking powder.
Fold in the beaten egg whites and gently combine.
Spread evenly over the pineapple.
Bake at 375 degrees approximately 30 minutes, or until golden brown and toothpick inserted in center of cake comes out clean.
Let cool 5 minutes in the pan, then invert onto a serving plate.
Serve with whipped cream.
