4oz bittersweet chocolate
1 stick unsalted butter
¾ cup sugar
3 large eggs
½ cup unsweetened cocoa powder with some extra for garnish

Preheat oven to 375 degrees and butter an 8in round baking pan.
Line the bottom of the pan with wax paper and butter the paper.
Chop the chocolate into small pieces.
Melt the chocolate with butter in a double boiler or in a metal bowl placed above a saucepan of simmering water.
Keep stirring until smooth.
Remove from heat and whisk in sugar and then eggs.
Sift ½ cup of cocoa powder into the mixture and continue to whisk until just combined.
Pour the batter into the round pan and bake in the center rack for 25 minutes or until a thin crust has formed on the top.
Allow the cake to cool in the pan for at least 5 minutes before flipping it over onto a serving plate. Dust the cake with additional cocoa powder and serve.
