1 stick of butter
˝ lb onions, sliced thin
2 ˝ pounds cauliflower, chopped small with stem and leaves removed
1 lb Fuji apples, peeled, seeded and chopped
1tbs madras curry
3 qts chicken or vegetable stock
4 cups whole milk
6 basil leaves
Salt and WHITE pepper and sugar to taste

Directions:
Directions:
In a soup pot, melt the butter and sauté the onions until translucent. Add the cauliflower and apples, cooking them for a few minutes but don’t let them brown. Add the curry and stock, simmering until the cauliflower is tender. Add the milk and simmer for 30 minutes. Salt, pepper and sweeten to taste. Add the basil leaves and transfer to a blender and process until smooth.
