3 cups long grain rice
1 large frying chicken
6 medium onions - chopped
1 clove garlic - chopped
1 tablespoon bell pepper - chopped
1 tablespoon celery - chopped
½ pound hot sausage
Salt and Pepper
Cayenne pepper
1 cup oil
4 cups water

Directions:
Directions:
Cut up chicken. Wash and season with salt and both peppers. Fry until golden brown in cooking oil. Lower heat and add all chopped vegetables except garlic. Cook until tender. Add the sausage, rice salt and pepper to chicken. Cook slowly for about 15 minutes over low heat stirring often. Add 4 cups water and chopped garlic. Stir and cover. Do not stir anymore. Simmer over low heat for 1 hour or until rice is done. Keep covered.

Can use shrimp but add at the end.
