1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
3/4 cup milk
1/2 cup sour cream
3 tablespoons margarine (or butter) melted

Directions:

Mix all ingredients together and drop by spoonfuls into a hot frying pan. When the batter starts to bubble around the edges, flip and brown the second side.

Serve with real maple syrup, jam, nutella - whatever you like .

This refers to my daddy - Frank Rizza - this was his "secret" pancake recipe - the secret is in the sour cream, which makes these pancakes light and fluffy.

You can also add a 1/2 teaspoon of lemon or orange extract to perk these up a bit.

Forget the mixes - this is a great recipe and really easy to make!
