Twice Baked potatoes Recipe

Ingredients: 8 large baking potatoes 1 pack of sliced bacon 2 cups sour cream 8 tablespoons butter 1 teaspoon salt 1 teaspoon pepper 2 cup shredded Cheddar cheese, divided

Directions: |
Directions: Preheat oven to 350 degrees Bake potatoes in preheated oven for 1 hour. (They should be soft when you squeeze them)
Cook the pack of bacon in the microwave and cook until very crisp. Drain, crumble and set aside.
When potatoes are done I take a pot holder and hold the potato and slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins.
To the potato flesh add sour cream, butter, salt, pepper.
Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins.
To cook the second time top each with cheese, and bacon.
Bake for another 15 minutes.

Notes: There are several ways to cook these and keep in mind I do not measure my ingredients, I just put it in and taste and get it to what I like. You may want to adjust the ingredients on this one.
You can also, put grated cheese in the mixture but I do not. I wait until I have everything in the skins and top it with the cheese and bacon.
I usually wait until the next day to cook the last 15 minutes. I cook a little longer because the potatoes are cold. I make a tent over the potatoes with tin foil and cook until they are warm. I take the tin foil off and cook for about another 10 minutes.
