1 3/4 cups flour
1/2 teaspoon salt
1 teaspoon baking soda

2-3 ripe bananas
1 cup sugar
1/2 cup oil
2 eggs
1/4 cup plus 1 tablespoon milk
1 teaspoon vanilla
1 teaspoon banana extract, optional
1 cup chopped nuts, optional

Directions:
Directions:
Preheat oven to 325º
Grease a loaf pan

Thoroughly mash bananas.
Beat wet ingredients and sugar with bananas.
Add flour, baking soda and salt, and mix just until well blended.
Fold in nuts.

Bake for 1 hour, 20 minutes or until a cake tester comes out clean.
