Lemon Butter Chicken Recipe

4-6 chicken thighs (can be bone-in or boneless, skin on or off)
2 teaspoons smoked paprika
salt and pepper
2 tablespoons butter
2 cloves garlic, minced
1 bag of fresh spinach
1/2 cup chicken broth
1/2 cup heavy cream
juice of one lemon
1/2 teaspoon dried thyme

Directions:

In a bowl, toss the chicken thighs with paprika, salt and pepper until coated on both sides

Melt butter in a large fry pan. Brown chicken on both sides and remove from pan.

Add garlic and sauté over low heat until soft (do not brown).

Add broth, thyme and cream and simmer until slightly reduced.

Add spinach and cook til wilted...a minute or two.

Squeeze in lemon juice

Return chicken and any juices to the pan.

Cover and simmer on low until chicken is done. About 20 minutes

This is not an old family recipe, but a new one that we like so much that it’s in the regular rotation. Quick, easy and cheap. It makes plenty of sauce which is good with rice, pasta or noodles, etc.
