Bolognese sauce Recipe

1/2 lb butter
1/4 C olive oil blend
2 ec yellow onions, diced
5 lbs beef, ground
1/4 C Kosher salt
1/4 C Black pepper, ground
5 C Milk
5 C Dry white wine
1 t nutmeg
1 #10 Italian tomatoes, puréed

4 lbs dry pasta per 200pan

Directions:
Directions:
Cook onions in butter and oil until translucent.
Add ground beef, season with salt and pepper.
Stir meat well until it breaks into pea size pieces. Cook until brown.
Add milk and let simmer gently until it completely reduces liquid, add nutmeg.
Add white wine until liquid is almost gone.
Add tomatoes and stir well. Simmer uncovered until sauce thickens.
Stir occasionally. Adjust seasonings as needed when sauce is done.

If serving for catering. Toss pasta in some sauce, then top with more sauce and parmesan.
Garnish with chopped parsley.
