Baked Macaroni and Cheese Recipe

1 Tbsp olive oil
¼ cup butter
¼ cup flour, rounded
1 tsp salt
1 tsp pepper
1 tsp dried mustard
4 cups milk
4-6 drops hot sauce
8 oz blocks each of Cheddar, Gruyerre, and Parmesan cheese, grated (about 6 cups total shredded)
1 box spiral pasta
1 cup Italian seasoned Panko bread crumbs

Preheat oven to 350º

In large pot, set water to boil for pasta. Add a handful of salt to the water. Add the pasta and stir. Do not add oil. Once cooked, drain and cover pan with a dishcloth, to keep the pasta moist.

In a medium soup pot, melt olive oil and butter over medium heat. Once melted and bubbly, add flour, salt, pepper, and mustard. Let the flour get bubbly and just a little toasted, but don't let it burn. Add milk and hot sauce. Turn the heat up to med-high, so the sauce will thicken, and stir constantly. Once it thickens, remove from heat, wait about 30 seconds, until the sauce calms down a little. Add the grated cheese all at once, and stir until it's melted and the sauce becomes stringy. Add the well-drained pasta to the cheese sauce and stir.
pour it all into a 9 x 13 casserole dish and sprinkle bread crumbs over the top, as desired. Bake 40 minutes, until bubbly and the bread crumbs are toasted.
