1 3 pound Beef fillet,(tenderloin)
Box of mushrooms

1 egg
package of proscuiool

Directions:
1 3 pound Beef fillet,(tenderloin) on roasting tray, brush with olive oil, roast for 20 minutes. cool and chill in fridge for about 20 minutes

chop chestnuts and mushrooms, finely like breadcrumbs , heat olive oil in pan and cook for about 10 minutes. Add dry white wine until all wine has been absorbed. cool, garlic

Add cling film to table, add half mushroom mixture to film, add roast, add rest on top of meat and chill in fridge as you roll out package of puff pastry. Beat 2 egg yolks with 1 t. water and brush pastry edges. Seal the rim with fork or spoon handle. Glaze with more egg. Chill for at least 30 minutes or up to 24 hours. Heat oven to 425 bake until crisp . 20-25 minutes for med. rare. Allow to stand for 10 minutes before serving in thick slices.
