6 to 8 medium potatoes (peeled and thinly sliced)
2 T. butter
2 T. flour
1 tsp. dry mustard
⅛ tsp. pepper
1 c. water from boiling potatoes
1 c. milk
6 to 8 slices Velveeta cheese
1 to 2 c. diced ham

Directions:
Directions:
Boil potatoes in large pan until tender, about 10 minutes.
Reserve 1 c. of water from boiling.
Drain potatoes and place in 9x13 baking dish.
In large fry pan melt butter and combine with flour.
Add dry mustard and pepper.
Add milk and reserve water.
Heat until thickened and bubbly.
Add 6-8 slices of Velveeta cheese (can add more if desired) to mixture along with ham.
Pour mixture over potatoes and bake covered at 350º for 1 hour.
