1/2 c. Philadelphia cream cheese -Chive & onion or Veggie
1 egg, lightly beaten
2 c. cooked Minute white rice
1 can (15¼ oz.) corn with red and green bell peppers, drained
1 c. Four cheese Mexican style shredded cheese, divided

Directions:
Directions:
Preheat oven to 375º. Mix cream cheese spread and egg in a large bowl until well blended. Stir in rice, corn, and 3/4 c of the shredded cheese. Pour mixture into greased 1 ½ qt. baking dish. Sprinkle with remaining shredded cheese. Bake 20 - 25 minutes or until cheese on top is melted and lightly browned. Makes 8 servings.
