Patti’s Lasagna
1 lb ground beef 2 large cartons cottage cheese, small curd
˝ onion, finely chopped 2 eggs, beaten
2 – 3 cloves garlic 3 tablespoons parsley flakes
2 - 6 oz cans tomato paste 1 cup Parmesan cheese
1 can tomatoes 2 large pkgs mozzarella cheese
2 tsp Italian seasoning 1–10 oz pkg lasagna noodles

Preheat oven to 350. Brown the ground beef with onions and chopped garlic. Add tomatoes, tomato paste and water from filling each paste can. Let simmer for 20 minutes. Add Italian seasoning and your choice of seasonings to taste.
Follow cooking directions on the lasagna noodle package but make sure you don’t cook too long. Remove noodles from stove but leave noodles in water until ready to use.
In a medium bowl combine cottage cheese, eggs and parsley.
Spray cooking spray in a large deep( 2” or more) baking dish. Lay noodles on bottom of dish and overlap if needed to cover the bottom. The next step: spread 1/3 of tomato sauce mixture over noodles, then 1/3 of the cottage cheese. The last step: sprinkle with parmesan cheese and spread with 1/3 of the mozzarella cheese. Make 2 more layers in that order. If you want thicker layers, you may only want to make 2 layers, but you will have less noodles.
Bake in oven at 350 degrees for at least 30 minutes or until cheese on top is beginning to brown and bubble. Let stand for at least 15 minutes before serving. It is less runny if you prepare one day ahead and refrigerate before baking.
Don’t forget the garlic bread and salad.

This is my version of lasagna that the whole family asks for when we have get togethers.
