1/2 cup sugar
2 Tbsp. cornstarch
1/4 tsp. salt
2 cups milk
1 egg
1 tsp. vanilla
1 1/2 - 2 Tbsp. cocoa (optional)

Directions:
Directions:
1. In the top part of double boiler, combine sugar, cornstarch, salt, and cocoa, gradually adding 1 3/4 c. milk while stirring. Put on hot water in double boiler.

2. Beat egg well, adding 1/4 cup milk.

3. Add egg and pudding mixtures, stirring.

4. Cook and stir until mixture thickens, about 10 - 15 minutes.

5. Remove from heat and add vanilla.
