SPRINGERLIES

4 eggs
1 lb. powdered sugar
1 T. lemon rin4 cups sifted cake flour
1 t. baking soda
2 jars anise seeds

Directions:
Directions:
Beat eggs with mixer until light and add sugar, lemon, flour and baking powder. Wrap& chill until easy to handle. Roll out to 1/2 inch thickness and cut into squares or use special Springerle rolling pin. Grease two cookie sheets and spread with thick layer of anise seeds. Press cookies into seeds and let sit out for 12 hours or overnight. Bake at 350 for 20 minutes. Cool and store for 2 to 3 weeks in airtight container. Last indefinitely without freezinig.
