Turkey Lasagna

Bolognese Sauce
3 T. butter
1 small onion, diced • 1 small carrot, peeled and diced• 1 small celery, diced
2 ounces thinly sliced prosciutto, diced
1 pound ground turkey
salt and pepper
1/2 cup dry vermouth or dry white wine
1 cup whole milk
1 can crushed tomatoes


White Sauce

2 1/2 cups whole milk
1 cup chicken broth
4 garlic cloves, minced
3 T. butter
1/3 cup flour
1/2 cup grated parmesan cheese
salt and pepper

Combine broth, milk and garlic in measuring cup and microwave until steamy hot about 8 minutes. Heat butter in frying pan and whisk in flour. Pour in hot milk all at once and whisk vigorously until sauce starts to thicken. Stir in cheese and season with salt and pepper to taste.

Put 1/4 cup white sauce in bottom of pan and put layer of lasagna noodles, then 2/3 cup of white sauce, 1 cup meat sauce and 1/2 cup of fontina cheese. Repeat three times, and end with noodles, white sauce and cheese. Cover with foil.

I use the oven ready Lasagna noodles and put them in dry and then add 1/2 cup boiling water, right before baking.
Bake about 30 minutes at very hot heat, 425 degrees. Remove foil and broil a couple of minutes until cheese and sauce are spotty brown. Remove from oven and let stand to set about 10 minutes. Serve.

Heat butter, add veggies and saute until soft. And turkey and cook until not pink. Add vermouth and simmer about 5 minutes until almost evaporated. Add milk and cook about 5 minutes longer. Add tomatoes and cook until reduced about 45 minutes.
