Deep Dish Chicken Pot Pie

Ingredients:

One Med. onion Chopped
variations of vegetables you have on hand
Sweet red pepper
fresh mushrooms
3/4 cup celery
saute all fresh vegetables.

Take out vegetables out of frying pan.
Add 2 T. butter or margarine
1/3 cup flour ( I use Wondra, easier)
1/2 t. salt and pepper
1 1/2 cups chicken broth ( I use one can)
1 cup milk or light cream
Stir all together until bubbly and thickened

Add:
2 1/2 cups cooked cut up chicken ( I use rotisserie chicken after we have had one meal)
1 cup frozen peas and carrots
Add back sauted vegetables

Directions:
Put everything in deep dish oven dish and top with one crust ( I use rolled up one in red box at Safeway. )
Bake at 400 degrees for 35 minutes and let stand for about 10 to 15 -- thickens as it cools.
