1 lb Ground Chicken
1/2 cup fine breadcrumbs (I use the Italian ones)
1 Large egg white (I use a whole egg)
1 Medium carrot
1 small onion
1/4 cup ketchup
1/2 tsp minced garlic
1 tsp Worcestershire sauce
1/4 tsp celery seed
1 tsp salt
1/8 tsp pepper

Directions:

Preheat oven to 350 degrees

Combine chicken and breadcrumbs in large bowl then set aside.

Cut carrot and onion into chunks then add to blender. (I use a small food processor)

Add remaining 7 ingredients to blender or food processor.

Process in blender until carrot is very fine.

Pour blender mixture into the large bowl with the meat mixture. Mix very well using your hands.

Form mixture into a loaf and place in a lightly greased 9x13 pan (I use a meatloaf pan).

Cover with foil and bake for 1 hour.

Remove foil and continue baking for 15-30 minutes, until loaf is cooked through.
