Ingredients:
Ingredients:
6 large sweet potatoes
1/2 c. butter
2 c. white sugar
salt to taste
1 tbsp. vanilla

Optional:
1 tsp. ground cinnamon
1 tsp. ground nutmeg

Directions:
Directions:
Peel sweet potatoes and cut them into slices. Melt butter in a heavy skillet - add sliced sweet potatoes.
Mix the sugar and salt (cinnamon/nutmeg). Cover the sweet potatoes with the mixture and stir. Cover skillet, reduce heat to low and cool for about 1 hour or until potatoes are"candied". They should be tender but a little and around the edges. Also the sauce will turn dark. You sill need to stir occasionally during cooling. Stir the vanilla just before serving. Serve hot.

In loving memory of Gertrude Craft.

Personal Notes:
This is the closest I could find to Grandmother Craft's. That is why the cinnamon and nutmeg is optional.
