Beef Stew Meat
1 large onion
31 oz can of whole tomatoes
2, 16 oz cans of stewed tomatoes
potatoes
carrots
salt and pepper

Directions:
Directions:
Season meat and brown in a big kettle. Slice onion and add to the meat. Cook over low heat for 2 hours, adding water if necessary. Add the tomatoes and stew for as long as you want. Two hours before you are going to serve, add small peeled potatoes and a package of carrots, cut into long pieces. Season to taste.

We grew up eating this fabulous stew and for me it is a true comfort food. If there were leftovers the second day, mom would dice up the potatoes and carrots, add a little broth and we had yummy vegetable soup to float our buttered crackers in! I'm not sure which day I liked better, but I know that whenever I make this stew, I get a nostalgic feeling of home and family!
