1½ lbs butter
2 tsp cinnamon
2 lbs Filo pastry
2 lbs chopped walnuts
1 tsp cloves

Syrup:
2 cups honey
2 cups sugar
½ tsp lemon extract
juice of 1 lemon

Directions:
Directions:
Combine walnuts, cinnamon and cloves in a large mixing bowl. Melt and clarify the butter. Brush the bottom of a 14" x 20" pan with butter and lay down one single sheet of filo dough. Work gently and but quickly to brush butter and layer filo until 6 sheet of filo are in place. Sprinkle a handful of nut/spice mixture around evenly. Alternate Filo then butter, Filo then nuts, and end with six buttered sheets of Filo on top. Brush well with butter on top. Cut into diamond shapes.

NOTE: Work carefully with the filo dough. Use a slightly damp dishtowel to cover the unused filo until you're ready for each individual sheet.

Bake 30 minutes, until golden brown. While pastry is baking prepare the syrup by combining all ingredients in a saucepan and bring to a boil. Allow it to cool a bit, then spoon/pour slowly over warm/hot pastry.

This takes time, and having helping hands is a good idea. WELL worth it, though. This makes enough for a large group, a potluck, or for packaging as gifts. Very, very rich, but a total show-stopper!
