6- 8 chicken breasts
2 stalks celery, chopped
1 onion, chopped
1 carrot, shredded or chopped
1 can cream of chicken soup
1 box chicken stock
2 tubes large ready to bake biscuits

Directions:
Directions:
Bake chicken breasts in a dish in microwave, covered, for 5 min. Meanwhile, in a large pot, cook onions and celery in small amount of oil until onions are clear. Chop chicken into bite size pieces. Add to onions and celery along with the soup and chicken stock. Simmer,cut up biscuits (I usually cut each biscuit into 4 pieces) and add to pot. Cook for about 30 minutes. Dumplings may appear to be raw but they will be cooked by then.
