2 T olive oil
1 large onion, chopped
red pepper, chopped
1 jalepeno, chopped
3 cloves garlic, sliced
1 tsp. cumin
1 tsp. sweet paprika
1 tsp. ground tumeric
1 28 oz can whole tomatoes with juice
6 eggs
Feta cheese, crumbled

Directions:
Directions:
In large deep skillet, heat oil and add onion, peppers, seasonings plus salt and pepper. Cook and stir for 10 minutes. Stir in tomatoes with juice and simmer for another 10 minutes. Crack eggs, one at a time, into a small bowl and slide into tomato mixture. Cook 5 - 10 minutes. Sprinkle Feta on top.
