1/2 pound salted butter
1 tsp real vanilla extract
1 TB brewed expresso coffee
3 heaping TB confectioners sugar, sifted
2 cups flour, sifted
1/2 tsp fine sea salt
1/2 cup toasted pine nuts, coarsely chopped

Directions:
Preheat oven to 350º. Cream the room temp butter until fluffy, then add vanilla and expresso. Sift the 3 TB confectioners sugar and add to the butter mixture.

Sift the flour and salt and add to the butter mixture. turn the mixture out on to a floured board and sprinkle the pine nuts on the mixture. Mix the dough and nuts well together with your hands. If dough gets to sticky add a bit more flour to the board and your hands. Once well mixed, place the dough in the refrigerator for half an hour.

Roll the dough in small balls (they will expand) and pace them on an ungreased cookie sheet. Bake for 20 minutes or until cookies turn a light golden brown. Cool on a rack and cool slightly.

Place the 2 cups confectioners sugar in a ziplock bag and shake 6 cookies at a time until completely covered in sugar. Place back on the cooling rack to cool completely before storing in a waxed paper lined tin can. Bon appetite!

Cookie is like a shortbread with slight coffee and nutty flavor. They melt in your mouth and look nice on the cookie tray in festive paper cups.
