1 1/2 C. Graham cracker crumbs
1/4 t. Ground cinnamon
1/3 Butter, melted
1 1/4 C. White sugar
1/2 C. Sour cream
2 t. Vanilla
5 Eggs
4 (8 ounce) packages cream cheese

Directions:
Directions:
Preheat oven to 475º fill cookie sheet 1/2” with water and place in oven. Combine crust ingredients and using a glass, press crust into a 9inch springtime pan about 2/3 the way up. Wrap a large piece of foil around the bottom and sides of pan. Place in freezer. Using a mixer, combine sour cream, cream cheese, sugar and vanilla. Blend for a couple mins or until smooth and creamy, scraping down the sides and bottom of bowl. In a medium bowl, whisk eggs then add to cream cheese mixture. Mix just enough to incorporate. Remove crust from freezer and pour mixture onto crust. Place in water bath and bake for 12 minutes @ 475º, then turn oven temp down to 350º and bake for 50-60mins or until top of cheesecake turns brown or tan, let cool and refrigerate for 4hrs before serving,
