olive oil
1 lb hot turkey sausage, casings removed
2½ chopped pepper
12 green onions or a small red onion
2 tsp chili powder
1 tsp ground cumin
1½ cans diced tomatoes
1 can black beans
1 can chickpeas
pepper to taste
8 x 10" tortillas
shredded cheese

Directions:
Directions:
Preheat oven to 350º. Heat olive oil in a frying pan. Brown sausage, onions and peppers. Add tomatoes, beans and spices and cook until there is not a lot of water left. Divide between the 8 tortillas and roll them up. place them side by side in a pan and sprinkle with the cheese. Bake for 30 minutes... until cheese brown and melty... mmmmm.
