4 bunches of baby Bok Choy
salt
sesame oil

a thing of dried Chinese noodles (enough for 4)

Sauce:
¼ cup soy sauce
3 tbs peanut butter
2 tbs sambal
1 tbs brown sugar
1 tbs rice wine vinegar
½ tsp anise or fennel
½ tsp ground coriander
½ tsp black pepper

1 lb cut up pork loin
2 tbs pureed fresh ginger
4 cloves garlic

Topping
toasted sesame seeds
chopped green onions

Roast the sesame seeds if you are going to use them. Cook the noodles according to the instructions. Save a cup of the water and set aside. Rinse the noodles under cold water and set asside. Blanch the Bok Choy in boiling water for 2-3 minutes until it turns bright. Remove from water and toss in a bowl with salt and sesame oil, set aside. Mix sauce ingredients in the blender with the cup of saved pasta water, set aside.
Fry the cut up pork loin in sesame oil at medium high heat until cooked through. Add ginger and garlic for 30 seconds then add sauce mixture from the blender, scraping up the browned bits.
Put noodles in a bowl, add bok choy and pork mixture with some of the sauce. Top with onions and sesame seeds and serve immediately.
