2 Packages Active Dry or Instant Yeast
1 Cup Water (warm)
1 teaspoons Sugar
2/3 Cups Butter (melted)
2 Cups Milk (scalded and cooled until warm)
1 Cup Sugar
4 teaspoons Salt
2 Eggs
10 to 11 Cups Unbleached All Purpose Flour

Directions:
Directions:
1. Dissolve active dry yeast in warm water and 1 tsp of the sugar. Set aside until bubbly, about ten minutes. (see note).

2. Mix together remaining dry ingredients and stir until combined. Beat the eggs then add all wet ingredients to the dry, stir until ingredients are moistened. Knead just enough to form a dough.

3.Place the dough in a large bowl covered with a slightly greased plastic wrap and place in the refrigerator for several hours or overnight.

4. About one to two hours before baking time, shape dough into individual rolls and place on a greased
9x13 inch baking pan. Cover with slightly greased plastic wrap and let rise until you can gently press your finger into the roll and forms slight dent that does not spring back.

5. Bake in a 350ºF, preheated oven for about 15 minutes or until golden brown.

*NOTE: If you are using instant yeast you do not have to Pre-soak the yeast. You can add the yeast with the rest of the dry ingredients.
