1/4 c. water
1-1/2 c. sugar
6 egg whites, stiffly beaten
1 box (16oz) powdered sugar, sifted
1 lb. pecans - chopped
1 tsp. vanilla

Directions:
Directions:
Beat the egg whites until stiff. Boil water and sugar until it spins a stiff thread(or until it forms a hard ball when dropped in cold water). Pour over egg whites. Beating constantly, add powdered sugar, vanilla, then pecans, Drop from teaspoon onto WELL greased AND floured cookie sheet. Bake at 300 degrees until light brown 20-23 minutes. Yield 3 dozen. (Use a stiff spatula to get them off the cookie sheet, or use parchment paper) It helps keep their shape better than if you use one that is flexible.
