1 tbs Olive Oil
1 lb Lean Ground Beef
1 Red Onion, chopped
1 Red Pepper, chopped
1 Yellow Pepper, chopped
2 tbs Ground Cumin
2 tsp Chili Powder
1 tsp Smoked Paprika
1 tsp Dried Cilantro Flakes
1 tsp Garlic Powder
56 oz Diced Tomatoes
2 ½ cups water
1 ½ cups mixed dried beans
Some Fresh Spinach

Toppings:
Avacado
Green Onions
Cheddar Cheese
Sour Cream

Directions:
Directions:
Put all of the ingredients in the crock pot and stir. Turn it on high and cook for 8 hours or so. Resist the urge to open the lid until towards the end and then stir a couple of times. Add toppings, as desired, to each dish and serve.

A double batch would have fit nicely into the crock pot. I like cumin, chili powder, and garlic so I went heaping on the measurements. I am not a huge fan of cilantro and nervous of the paprika so I went a little shy on them. I used mostly chickpeas and black beans because I like them and some black eyed peas and pinto beans. James insists that chili is only good if served with sourdough bread and butter. The green onion was really nice as a topping which I hadn't expected.
